Who remembers the popular meal prep sessions during COVID? We were stuck at home, online grocery shopping was a vice, and with all the time in the world and multiple mouths to feed, meal prepping wasn’t just a pastime; it became a necessity. My boys are considerably older now (22 and 18); they are both at uni and work multiple jobs. I, too, have been juggling multiple businesses, a job, a reno and holding down the fort at home. And although my job entails cooking every day, sometimes multiple times a day, one dedicated weekly cook allows me the freedom to work with focus while ensuring both the boys and I have nutritious meals prepped and ready in the fridge or freezer.

I mainly meal prep on Tuesdays (because I document and shoot it to share it with you, so it has to be on a working day for me). In an ideal world, I would like to meal prep at leisure (by myself!) on a Sunday morning while I listen to my favourite music and potter around the kitchen. This is what I used to do during the lockdowns. And so I am sharing my meal plans with you this weekend in the hope that it gives you plenty of time to get organised, shop and get ready for the week.

It is one thing to prep 2-3 dishes that will last you two days. But it is a whole lot of something if you can manage to prep 7 full dishes that will give you five nights of delicious, balanced dinners. And extras to spare. That is 28 meals, a big salad and savoury muffins for a snack - dinner sorted for a family of four for the whole week, plus some lunches and a snack. And I am here to show you how. I have done the thinking; I have done the work; all you need to do is … steal my meal plan!

Today we are making the following recipes (28 meals in total): balanced, nourishing meals with plenty of vegetables, protein, carbs, and fibre. Takeaway containers packed with perfect portions of mains and sides, ready to pull out of the fridge/freezer for a quick meal while working from home or taking along with you to school/uni/work. And believe you me, at the end of a long day when you don’t feel like cooking but want to save money on takeout, just pulling one of these packed meals from the freezer is like hitting the jackpot!

Bonus Recipe

Slow Cooker Beef Massaman Curry

Serves 6 / Makes 6 portions

  • 1 tbsp oil

  • 1.2kg beef chuck steak

  • 4 French shallots (or small brown pickling onions), sliced

  • 2 star anise pods

  • 4 green cardamom pods

  • 1/2 cinnamon stick

  • 1 X 114g can Maesri Massaman paste

  • 1 ½ tbsp fish sauce

  • 2 ½ tbs coconut sugar

  • 400g can full-fat coconut milk

  • 2 large potatoes, peeled and cut into chunks

  • 2 tbsp toasted, crushed peanuts – to serve

  • Handful of fresh coriander – to garnish

  1. Heat oil in a large frying pan on high. Trim fat off the chuck steak and cut into large chunks. Add the beef to the pan and sear both sides over high heat (approximately 2 minutes per side). Remove and add to a slow cooker.

  2. Add the shallots to the pan and cook over high heat for 2 minutes, until glazed. Remove and add to the slow cooker.

  3. Add star anise, cinnamon, cardamom, fish sauce, coconut sugar, coconut milk, potatoes and Massaman paste to the slow cooker. Mix gently. Cover and cook on “high” for 4 hours or on “low” for 8 hours.

  4. Garnish with toasted peanuts and coriander. Serve hot with steamed rice.
