Hello veg-squad! Today, I’ve got one of my favourite fruity salads - a gorgeous Snow Pea Strawberry & Feta Salad, along with a super useful Fruit-Based Salad Template (that I use to create new salads on a whim!) for ENDLESS salad variations.

One of the best ways to enjoy peak season fruit at its very best is in a carefully crafted salad. Not a fruit salad but rather a savoury salad packed with freshness and crunch where the fruit stands bright and plump in the spotlight.

My Snow Pea Strawberry Salad is one to make this weekend if you have scored punnets of big, red, juicy, sweet strawberries bursting with flavour. A salad made with only a handful of ingredients and perfect when eaten chilled. I like serving this at the weekends when the weather turns a bit balmy. Goes really well with something grilled and a chilled glass of Prosecco or Rose. Alfresco is even better!

But what to do, if strawberries aren’t in season?

Fret not! I’ve got you covered. Below is my template for putting together a really good “fruit” based savoury salad, no matter what you have on hand. Think mango, peaches, berries, watermelon, cherries, oranges, figs or plums! I have put together tasting notes, ingredient pairing and the best salad dressings to use.

Fruit-Based SALAD TEMPLATE

Here are the 7 main things you need that you can mix and match to create a brand-new salad at your whim and fancy. These are the pairings and rules I follow when I want to whip up a salad with what I have on hand.

Try something out this weekend - Pick the following

Category 1 - 1 ingredient
Category 2 - 2 or 3 ingredients
Category 3 - 1 ingredient
Category 4 - 1 ingredient
Category 5 - 1 ingredient (this is optional)

Pick ingredients you have on hand and feel will go best together, add the basic dressing from today’s recipe and enjoy the brand-new salad you’ve just made!

Let’s try it! For eg, from the list below I can pick

Mango, Onion, Bean Sprouts, Watercress, Capers and Spring Onions + Salad Dressing! YUM!

OR

Blueberries, Shaved Brussels Sprouts, Toasted Pistachios, Spinach, Fried Halloumi Cheese, Quinoa, Parsley + Salad Dressing! Double YUM!

  1. Fruit
    Use the season’s best fruit. Ripe, fragrant, beautifully coloured and bursting with nectar and flavour. This fruit is firm but incredibly honey-like and sweet.
