🌿 Silverbeet Chickpea Curry
A deliciously creamy, restaurant-style vegan curry packed with two secret ingredients for incredible flavour!

Another easy vegan curry that is incredibly creamy and bursting with those delicious Indian, street-food flavours that will guaranteed make your home smell like an inviting Indian food truck drawing you in at your local markets with the delicious aroma of spices cooking!
And it uses a solid half bunch of Silverbeet! I love spinach but I often neglect silverbeet. The only times I cook with it is to make a yummy Silverbeet & Ricotta Pie or to green up my beautiful Minestrone Soup. This Chickpea Curry is the best vessel for a big bowl of chopped, verdant silverbeet. It adds a bit of freshness and a lot of heft to the curry as the leaves cook down into buttery goodness in the creamy sauce.
