I love salads that are a revelation. Party In My Mouth as the younger generation likes to declare ceremoniously, every time they have a fork full. A salad that hits the trifecta - tasty, textural and beautiful. There is only one potato salad recipe (well, there are two actually! but more about the other one later) that I LOVE to make and eat. This Super Green Roasted Potato Salad is a hot favourite, not only in our home but everywhere I have packed and taken it to.
It has all my favourite things - Kipfler potatoes roasted to golden crispiness, tossed with a briny, punchy pesto (made with olives and other good things!), fresh rocket, juicy crisp radish, sweet red onion and toasted nuts.
