What is Live More Veg?
I launched Live More Veg (my paid newsletter - currently 52 exclusive new recipes and counting….) 5 months ago to encourage, inspire and empower you to include more fruit and veg in your weekly meals. It is something I have been striving to do for my own family for the past few years (who remembers all those glorious Meal Prep Sessions I shared during lockdown??) Apparently, they were so popular that retailers in Sydney started running out of glass jars because everyone was doing the meal prep along with me and getting inspired by all those pictures of my meals prepped in glass jars.
I only found out about this from some of the retailers who wrote to me and one lovely small business Just Jars sent me the most beautiful letter and a big carton of jars in a few different sizes to say thank you. It was the sweetest thing!
After the lockdown ended, I continued my meal prep sessions with a strong focus on vegetarian prep. My goal was to include 20 varieties of fruit and veg in our weekly meals. It was hard at first but we got there eventually. 15-20 is super easy to do. Summers are easier than winters. But with a little bit of planning and just 2-3 hours set aside once at the weekend, I guarantee you that feeding your tribe 15-20 different varieties of fruit and veg on a regular basis will become a breeze and your body will feel amazing!
Today, we’ll start with a basic “Live More Veg” meal prep, nothing fancy or advanced. Just good old recipes filled with veg goodness, super easy to make and all ready in just 2.5 hours! This week, we will be prepping and eating 15 varieties of fruit and veg (pictured below - aiming to hit all the colours - yellow, orange, red, purple and green!). The recipes use the best seasonal produce and ensure that you have something prepped for every meal along with lots of serving ideas - whether it is breakfast, lunch, dinner or snacks! A lot of these recipes double up as excellent lunchbox meals for work and school too.
