Falafel Spiced Chickpea & Roast Tomato Flatbread With Tzatziki

Chickpeas are a weeknight lifesaver. And although I am partial to a very good Chana Masala, I think chickpeas really shine when treated with Middle Eastern flavours. Like this Chopped Falafel Salad that is creamy and decadent or these Moroccan Chickpeas that are fragrant and smoky. No other pantry meal comes together so quickly and offers up a hefty dose of plant protein and deep satisfaction than one with chickpeas in it.
Today, I am sharing a one-tray oven recipe for my weeknight favourite Falafel Spiced Chickpeas that I use to make these crispy flatbreads - almost like a Middle Eastern Pizza. The chickpeas are mouthy, aromatic and bursting with wonderfully exotic flavours. The roasted truss tomatoes provide the perfect burst of sweet umami this savoury dish needs.
This beautiful roasted chickpea mix is great to have on hand and can be eaten in as many ways as your imagination can take flight. You can top this on pan-toasted Lebanese flatbread or pita bread that has been slathered with baba ghanoush (for a hearty, warming meal) or tzatziki (for a light, fresh version). I often also heap this delicious mix on Mujadara (Crispy Onion & Lentil Rice). Also fantastic on oven-roasted jacket sweet potatoes.
I love to leave the truss tomatoes intact when roasting and also when serving these flatbreads at dinner parties. They look beautiful and people don’t mind, plucking off the roasted tomatoes and smooshing them on the flatbread.
