Corn Chaat
Chaat or chat is an umbrella term used for Indian street food that is also popular in neighbouring countries like Pakistan, Bangladesh and Nepal. Chaat is a collection of savoury snacks served as appetizers or sold at roadside stalls and food carts throughout the region. They are punctuated by their distinctly pungent sweet, sour, salty and spicy flavours. They are delicious and finger-licking good - hence the name "chaat" or "chat" which means "to lick/to taste" in Hindi.
Corn Chaat (also known as Masala Corn) is a deliciously tangy Indian street food made with shucked cooked corn, onion, tomato, chilli and coriander. A warm salad of sorts - this dish has mouth-watering sweet, sour, salty and spicy flavours. Served with a dousing of sweet and sour Tamarind Date Chutney and fine chickpea noodles (sev), my 10-minute recipe is light, healthy and very addictive!

Mexican Corn Salad
Elote is a famous Mexican street corn snack of whole corn grilled on fire and slathered with a creamy, garlic and chilli sauce topped with Cotija cheese. The salad version of Elote, also known as Esquites is sold in cups or bowls through the streets of Mexico and parts of the southern US.
In this salad version, fresh corn cobs are shucked and the kernels are cooked in a pan on high heat to char them and bring out their sweetness. They are then tossed in a bowl with all kinds of delicious things.

What To Cook This Week
Early Feb Journal Entries
Had a date night on Friday. Walked around a lot. Went to a gorgeous Korean-fusion restaurant in Chatswood called “The Evergeen” that was bursting with natural greenery (small indoor trees, creepers, bonsai pots) surrounding green velvet ornate chairs gilded with gold lions. The food was gorgeous too and some deliciously interesting things I sampled were Korean Gnocchi, Banana Pannacotta, Burrata With Candied Walnuts and Kimchi Margarita.
Ended up watching the movie Argylle to finish off the date. The only way to describe it is that it was a mad-caper, bonkers, spy thriller that was so cleverly nonsensical that it was actually loads of fun. A strong literary element in the story sees you watch an utterly “out-there, cheesy” spy story unravel visually as the author of the story pens it on paper. But there is a connection to what is happening in her life as well. Real, good fun!
Watched The Dry. Based on Jane Harper’s debut novel with the same name, the movie introduces Eric Bana as Detective Aaron Falk (and what a brilliant casting it is!). The movie was true to the book, brilliant in its heartbreak setting of rural Australia and the harsh life in the outback while navigating a murder mystery.
Finished watching Season 3 of The Morning Show and really enjoyed this high stress, high-stake drama of people in the news business.
