ROAST PUMPKIN SALAD WITH QUINOA, FETA & POMEGRANATEÂ Â (gluten free)

What is the best thing to make from a tray of roasted pumpkin? A quick, juicy, lip-smackingly delicious and super healthy salad! Caramelized cubes of pumpkin are tossed with protein-packed quinoa and peppery greens. Bursts of sweet pomegranate seeds and salty feta works brilliantly with the simplest of classic salad dressings - lemon and olive oil!
This salad is a complete meal - fiber, protein, good fats and carbs. Meal preps really well (roast a big tray of pumpkin, cook some quinoa aaaaannndd DONE!). I have been cooking this for work lunches every other week. 25-minute salads are the best!!
CHOCOLATE & ALMOND BUTTER COOKIESÂ (vegan)
Deliciously nutty dark chocolate cookies are always a hit! BONUS points if they are vegan and nobody notices (because they smell and taste buttery and not coconutty!)

Have you watched The Bear?
I recently watched The Bear (watch trailer)Â on Disney. Correction ... I binged it! Over two nights, staying up until 2 am. It was really good!
It is a brilliant story of an award-winning, Noma trained, dynamic young chef working at the best restaurant in the world who has to give it all up after he inherits his brother's run-down sandwich shop. I loved the chaos and energy of the show. The acting was brilliant and the ensemble cast of quirky, food-loving misfits really works a treat. Give it a try!

Do you have a favourite copper pot? Looking a bit tired? Squeeze some ketchup on it and rub generously with a paper towel. Rinse with warm water, wipe dry. Really brightens it up and refreshes it.
