I woke up this morning thinking it was Tuesday. The way my work and life are currently structured, I often have no concept of days or time. A cup of coffee and an email later, I now know it is Friday, and that makes me instantly happy knowing I have gained a whole weekend.

Lately, I am finding my groove again, and it feels so incredibly familiar and comforting to meet the part of me that used to buzz with ideas and enthusiasm, that planned new ventures, that experimented with ingredients and appliances and devoured cookbooks and podcasts. This past week, I got a pizza oven! And put this trusty crispy-crust easy pizza dough recipe to the test.

A Gozney has always been on my wishlist, but having grown up in India (where gas cooking is non-negotiable) and hearing too many horror stories of gas bottles exploding and starting fires, I have been (unjustly!) wary of gas cooking. An opportunity to partner with Gozney recently changed all of that. Gozney’s newest offering, Arc Lite is a compact Pizza Oven that is sleek, tiny, mighty and incredibly easy to use - as you can see here in my Instagram Reel. And it makes those incredibly rustic wood-fired style pizzas with charred bubbles around the edges. Happy days! The realisation that you could turn any dough into fluffy, cooked bread with charred pockets is highly exciting. Naan next? Perhaps Totti’s Balloon bread?

I love a good date pudding. This week, I baked one with bananas and dark chocolate. What was meant to be a robust banana loaf for a post-walk treat turned into a delicious, dense pudding made with really wholesome ingredients. I don’t know what I prefer more, toasted with butter for breakfast or warmed with vanilla ice cream pooling on top for dessert! Both great!

Serves 8 / vegetarian

A robust breakfast loaf packed with natural sugars and all good things. Or a date pudding with a twist. Either way, this Banana Chocolate Date treat is truly sensational, whether it is toasted golden and smeared with lashings of butter or served warm with a dollop of vanilla ice cream.
